Butter beans are also known as Lima beans because of their starchy yet buttery texture, lima beans have a sensitive flavor that supplements a wide assortment of dishes.

The ingredients needed to make Butter beans curry:
- Take 1 can butter beans ~400g, drained
- Prepare 200 gms spinach leaves, washed and chopped
- Take 1 tbsp Oil
- Prepare 1 medium red onion, sliced thinly
- Take 7-8 cherry tomatoes
- Take 1 red pepper, sliced thinly
- Take 2 tbsp tomato paste
- Prepare 1 green chilli, chopped
- Prepare 1.5 tsp garam masala
- Get 1 tsp red chilli powder, adjust as needed
- Make ready 1 tsp garlic paste
- Get 1/2 cup water
Rinse the butter beans/lima beans (vaal) in water and soak them overnight. The butter beans tends to grow in size as they soak water so make sure to add sufficient amount of water while soaking. I have always been very fond of butter beans and love them best cooked as a curry with a slightly sweet and sour taste. This recipe is very simple to make.
Steps to make Butter beans curry:
- Heat a pan with oil in it. and add in the chopped green chilli along with ginger garlic paste. Let it cook for about 1 min, till it gets aromatic.
- Add in the sliced onions, and cook till they start sweating.
- Add in the beans along with tomato paste and 1/2 cup water. Cover and cook for 5-7 mins.
- Add in the cherry tomatoes along with red 🌶️ chilli powder, salt and garam masala.
- Let it cook for another 4-5 mins. Don't let the tomatoes get mushy. cook till they have a bite to them.
- Add in the chopped spinach🥬 and mix everything thoroughly. Let it simmer on medium heat till the spinach withers. Serve hot along with some roti or naan.
In a blender or food processor, purée the quartered onion, ginger and garlic to make a paste. Add the butter beans, onion, pepper, garlic, chili flakes, turmeric, paprika, garam masala, chili powder, oregano, and half of the salt. This is a simple and delicious butterbean curry that is quick to make! Garnish with some sesame seeds for an extra hit of flavour! Butter beans is my favorite, but we don't get it here often.
