Pork shoulder is cut from the thinner end of the shoulder, contains slightly less fat, and can be better for cooking and slicing whole. Pork butt, on the other hand, is cut from the thicker, fattier end of the shoulder, and excels in recipes like pulled pork where the meat is meant to be shredded. Look for pork shoulder or pork butt. Even though it's called a "butt," it's actually part of the shoulder meat. (The actual rear end is called the ham!) Go for bone-in or boneless, whichever you prefer. Bone-in shoulders take a little longer to cook, but can make the meat more flavorful and succulent.
