The ingredients needed to make Butter Paneer Masala:
- Get 250 gms paneer/cottage cheese, cubed and fried
- Prepare 2 tbsp cashew nuts (soaked in water & grounded to smooth paste)

- Take 1 green chilli, slit
- Take 3 garlic cloves, crushed
- Take 1 inch ginger – julienned
- Get 1 bay leaf
- Make ready 1 tsp garam masala
- Prepare 1 tsp kasuri methi (dried fenugreek leaves)
- Get 1/2 tsp red chilli powder
- Take 1 tbsp oil + 2 tbsp butter
- Make ready 1.5 cups water
- Get to taste salt,
- Prepare 1 handful coriander leaves for garnishing (optional)
Instructions to make Butter Paneer Masala:
- Add oil and butter in a pan.
- Add bay leaf and fry till the oil becomes fragrant.
- Add ginger and garlic and fry till the raw aroma disappears.
- Add tomato puree and stir.
- When the puree begins to cook, after about 5mins, add red chilli powder.
- Stir and continue to saute on a low flame, till the oil starts leaving the sides of the pan. This takes approx 20mins.
- Add the cashew nut paste and cook for another 5mins, continuously stirring it.
- Add water and let it simmer, it will become thick.
- Add the slit green chilli and salt and stir well.
- Add the paneer cubes and cook in the gravy till they become soft and cooked.
- Add crushed kasuri methi leaves and garam masala.
- Stir well and garnish wish coriander leaves and serve hot with rice or paratha.
