- Prepare 1 kg carrots
- Get 1 fresh black pepper
- Make ready 2 tsp chopped tarragon
- Prepare 1/4 tsp low-sodium salt

- Get 2 tbsp sunflower oil or use spray oil
Peel carrots and cut them lengthwise in half, and then in half again. Toss carrots with olive oil, cumin and paprika. Place the carrot slices in a bowl, and toss with olive oil and salt. Lay the carrots in a single layer on a cookie sheet lined with baking paper.

- Preheat the oven to gas 6 / 200C / 400°F

- Toss the carrots to coat in the oil/starch mixture and let bake for 45 minutes
