- Prepare 1 tbsp mayonnaise

- Wash, chop and dry the lettuce. Leave to one side.
- Make the chipotle mayo by combining the mayonnaise and chipotle paste. Leave to one side.
- Prepare the avocado. Add to a bowl with oil, salt, pepper, garlic and chili flakes. Use the back of a fork to smash together. Leave to one side.
- Microwave the rice per instructions.
- Microwave the sweetcorn. (1-2mins)
- Heat the beans. (Or have cold if you prefer). Make sure to use ones pre-soaked. I used my slow-cooker chili recipe (please see my other recipes for how to make).
- Start layering the different components. Start with rice, then add the rest. Cover the lettuce with the chipotle mayonnaise.
- Top with cheese and jalapeño peppers. Enjoy!
