Add the vegetables to the baking dish. Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together. Return skillet to heat; add reserved fat, mushrooms, and onions; and cook until onions are soft.
Steps to make Sausage and sweet potato bake:
- Put all the chopped veg into a large ovenproof dish.
- Add the oil, vinegar, herbs and honey /sugar and coat the veg well.
- Add the chopped sausages and mix into the veg
- Cover the dish with foil and cook for an hour on 180°c
- Remove from the oven and stir well. Add your chickpeas and feta and stir again
- Return to the oven for 20 minutes without the foil.
- Serve in warm bowls with some crusty bread
In prepared baking dish, layer half of sweet potato mixture, half of sausage, and all apple slices. Spray a large baking dish with cooking spray. Layer sweet potatoes, apples and onions in the dish. Sprinkle with seasonings; toss to coat. Spread evenly over pan, leaving room for the sausage.
