The ingredients needed to make Szechuan Prawns:
  1. Take 500 g peeled and deveined prawns
  2. Prepare 2 tsp Sichuan peppercorns
  3. Prepare 5 spring onions, chopped (i didn't have any)
  4. Prepare 1 cup plain flour
  5. Prepare Vegetable oil for shallow frying
  6. Prepare 6 garlic cloves, cut into thin strips
  7. Make ready 5 cm ginger, peeled and sliced into thin strips
  8. Prepare 1-2 red chillies, julienned, optional
  9. Make ready Marinade
  10. Get 2 tbsp light soy sauce
  11. Prepare 1 tsp sesame oil
  12. Take Stir-fry sauce
  13. Prepare 2 tbsp light soy sauce
  14. Get 2 tbsp rice vinegar
  15. Get 1 tsp sugar
  16. Make ready 2 tbsp sriracha sauce

Meanwhile, chop the cooled pineapple into bite-sized chunks. In a bowl, combine the pineapple juice, vinegar, soy, cornflour and a splash of water, then add to the wok with the chargrilled pineapple and peppers. Reduce the heat to moderate and add the charred bell peppers, the garlic, ginger, the chopped scallions, and the red-pepper flakes. Stir-fry for a few seconds, then add shrimp.

Instructions to make Szechuan Prawns:
  1. Combine the prawns with the marinade ingredients. Set aside.
  2. Dry roast Sichuan peppercorns till fragrant then transfer them into a mortar and pestle to grind them to a fine powder. Set aside.
  3. In a small bowl, combine the ingredients for the stir-fry sauce - Pour 1 tbsp vegetable oil into a large non-stick frying pan. Heat the pan over high heat. Coat the prawns in the flour, shake off any excess flour and then carefully place each prawn into the oil. Cook for about 2-3 minutes each side or golden brown. Drain on paper towel.
  4. Discard the oil from the pan and clean it. Return it to medium-high heat. Add 1 tbsp of vegetable oil and then add the garlic, ginger and chillies. Saute until fragrant then sprinkle the ground Sichuan peppercorns. Mix through then add the stir-fry sauce and toss until well combined, thick and sticky. - Pour onto the prawn pieces. Scatter the spring onions and serve straight away.

Stir sauce again, then add to wok, stirring constantly until mixture thickens. Prawns in Schezwan sauce is one of the best Chinese recipes of prawns. The Schezwan sauce is known for its distinct flavour and can uplift the flavours of any recipe. It combines well with prawns to make this starter non-vegetarian delight. If using frozen shrimp, thaw the shrimp thoroughly before using.
