  1. Take 1 cup idli batter
  2. Make ready 1 beetroot rinsed, peeled and grated
  3. Get 1 onion finely chopped
  4. Prepare 2-3 green chillies finely chopped
  5. Get 1 inch ginger finely chopped or grated
  6. Get To taste salt
  7. Take 1-2 sprigs curry leaves
  8. Take 1/2 tsp Eno fruit salt
  9. Take As needed oil for cooking
  10. Make ready For tempering:
  11. Prepare 1 tsp mustard seeds
  12. Take 1 tsp cumin seeds
  13. Get 5-7 curry leaves
  14. Get 1 pinch asafoetida (hing)
  15. Prepare 1 tsp oil
Instructions to make Beetroot Appe:
  1. Assemble the ingredients like idli batter, grated beetroot, chopped onion, chopped green chillies, chopped ginger, curry leaves and salt.
  2. Transfer all these to a mixing bowl. Mix everything well and keep aside.
  3. Heat 1 tsp oil in a tempering pan. Add mustard seeds, cumin seeds, hing, curry leaves and saute on a medium flame for few seconds. Turn off the flame and add the tempering to the above prepared batter. Mix well and keep aside for 20-30 minutes.
  4. Add the Eno fruit salt to the batter and give a good stir.
  5. Heat the appe pan and grease the moulds with little oil. Pour a spoonful of batter in each mould, cover the pan and cook on a low flame for 2-3 minutes.
  6. When the outer surface of the appe becomes light brown then turn upside down and cook the other side for 2 more minutes. See that the appe gets golden brown from both the sides.
  7. Take out the appe from the moulds and follow the process for making similar appe with rest of the batter.
  8. Serve Beetroot Appe hot with green chutney or any chutney of your choice in breakfast or as a snack.
