Steps to make Vegetable Upma with Sambhar:
  1. Take a wok and add 1 cup of samolina to roast.Roast it but the colour should not change.keep aside.
  2. Now take a cooker add washed arhar dal add 3 cups of water.Add termeric powder and salt.Cook it.
  3. Now take a wok add oil heat it,add mustard seed,curry leavesand whole red chillies say 7 of them.Add grated ginger.let it crackle.Add urad dal and chana dal.Let it be golden. Now Add chopped onions,green chillies.
  4. Saute till onions become translucent.Add grated carrot and capsicum diced.saute it till tender.Now add semolina and add 2 and a half cup if warm water.add salt and lemon juice to taste.
  5. Let it simmer for 5 mnts.Add spoon full of ghee when properly cooked.Your Upma is ready.
  6. Now take a pan,add oil heat it.Add mustard seeds,fenugreek seeds aesafoitida,curry leaves and rest of the red chillies.
  7. Add chopped onions and green chillies and tomatoes,saute it till tomatoes are tender.
  8. Add cooked arhar dal and cook.Now add tamarind pulp and 2 table spoon of sambhar masala.stir it nicely.Bring it to boil and simmer for 5 minutes.
  9. Now your sambhar is done.
  10. Serve upma with sambhar and enjoy this delicasy from South India.The aroma of curry leaves with aesafoitida will enhance your taste buds.
