A similar kheer preparation is quite popular as Sweet Potato Kheer in other regions on India but there is some fundamental difference in cooking style.

The ingredients needed to make Aloo payesh potato kheer:
  1. Take 500 ml milk
  2. Get 2 tbsp sugar
  3. Get 1 1/2 tbsp condensed Milk
  4. Make ready 2 tbsp water
  5. Prepare 2 medium potato peeled and grated
  6. Prepare 1/2 tsp Elaichi(cardamom) powder
  7. Make ready 2 Bay leaves
  8. Take 6-7 kaju(cashew) roughly crushed
  9. Take 10-15 kismish/raisins

I made it a few times when I first came here after marriage and have not prepared in a very long time. As I said, I was going to start my marathon with alphabet "B" and in the last minute decide to start with "A". Potatoes should have blended well in milk. Once the potato kheer becomes thick, Add pieces of dry fruits in it.

Instructions to make Aloo payesh potato kheer:
  1. In a pot, take milk and heat it upto one boil. Lower the flame add 2 bay leaves.
  2. Now, let it simmer for another 5 mins and add the sugar. Let it dissolve completely.
  3. Grate potatoes, and squeeze of the potato juice partially,like it should retain some juice don't squeez off all the potato juice. It'll help thickening the milk.
  4. Add this to the milk and add 2 tbsp water or milk to this if it starts turning too thick.
  5. To this add the condensed milk. Keep stirring at low flame.
  6. Add the cardamom I.e elaichi powder and stir. The temprature should be at medium to low this whole time.
  7. Add the dryfruits and let simmer for another 2-3 minutes. Check if the potato is cooked.
  8. If yes then turn off the heat and let it cool down. Enjoy!

OPTIONAL : After two - three minutes; add Saffron or Kewra essence in it for delectable taste and fragrance. Aloo ki kheer or Potato Kheer is ready. Kheer is one dessert that the whole country is obsessed with - perhaps, this is why we find the versions of the same dessert across India, kheer, payesh, payasam, payoxh, phirni, gil-e-firdaus are all a kind of milk pudding prepared in somewhat similar ways, however the ingredients and consistency may vary a bit. Payesh is just like kheer, which is made with love using simmering milk mixed rice, sugar and a pinch of cardamom powder with a resplendent garnish of chopped pistachios, cashew nuts, and almonds. There is something about the authentic Bengali cuisine we cannot stop loving.
