The ingredients needed to make Potato Payesh:
  1. Make ready 2 potato
  2. Prepare 1lit milk
  3. Make ready As needed Khejur gur as per your desired sweetness
  4. Prepare 4 Cardamom
  5. Take 2 tablespoon Ghee

Switch off the flame. "Dadubhai, ota ke Payesh bolena. Payesh e dudh, chaal aar chini chhara kichui thakbena. Chaal gulo sob sedhho hoye fete jaabe tao Payesh kheer hobe na, tobe seta Payesh. Edeshi ra khay!" (Payesh should have nothing but rice, milk and sugar.

Instructions to make Potato Payesh:
  1. Take the potatoes and wash it properly
  2. Peel the outer cover and cut it into small pieces and wash it properly
  3. Take a karai and add Ghee. After heating add small pieces of potatoes and continously stir it for 4 minutes in medium flame. After that add the milk and cardamom. Continously stir it
  4. When the potatoes will be properly cooked and milk become concentrated, add gur into it
  5. Again continously stir it till the total gur mixed with payesh and close the gases to have a good delicious payesh for your lunch or dinner as a dessert

And the quantity of rice must be minimal. Payesh is just like kheer, which is made with love using simmering milk mixed rice, sugar and a pinch of cardamom powder with a resplendent garnish of chopped pistachios, cashew nuts, and almonds. There is something about the authentic Bengali cuisine we cannot stop loving. Starting from lavang latika to the tradition payesh i.e. rice pudding, she slays them all with utmost finesse!
