  5. Get 4 each Large sweet onions
  6. Take 3 tbsp Lime juice
  7. Take 1/2 cup Salt
  8. Make ready 1 cup Sugar

  10. Make ready 1 cup Apple cider vinegar
  11. Prepare 4 each Habanero peppers( if you like it really hot!)
Instructions to make Hot Salsa:
  1. Chop onions, cilantro, green peppers, jalepeno peppers, and the habanero peppers if you are adding them.
  2. Blanch the tomatoes in hot water( approximately 150 degrees) for 3 minutes. Transfer to a cold water bath.
  3. Core and peel the tomatoes and run them through a salsa strainer.
  4. Pour the strained tomatoes into a large pot and add all of the other ingredients.
  5. Stir well and bring to a boil. Transfer the mixture to jars while hot for sealing. Add lids and tighten bands firmly. Jars will seal as salsa cools.
  6. Makes approximately 12 pint jars.
