The ingredients needed to make 'Somen' & Pork Stir-Fry:
  1. Take 90 g x 4 'Somen' Noodles
  2. Get 1 tablespoon Sesame Oil
  3. Make ready 200-300 g Pork *thinly Sliced

  5. Take 1 small piece Ginger * sliced into fine strips
  6. Prepare 1 Onion

  9. Make ready 1/2 cup ‘Mentsuyu’ Noodle Dipping Sauce
  10. Prepare *Note: To make the sauce, mix 1/4 cup Dashi Stock (1/4 cup Water & 1/4 teaspoon Dashi Powder), 1 tablespoon Mirin, 1 tablespoon Sake (Rice Wine), 2 tablespoons Soy Sauce
  11. Prepare Extra Soy Sauce
  12. Get 3-4 Spring Onion *finely chopped

Instructions to make 'Somen' & Pork Stir-Fry:
  1. Slice Pork very thinly and season with Salt and White Pepper. Lightly whisk Eggs in a bowl and season with Salt and White Pepper. Slice Onion and Ginger into thin strips.
  2. Cook ‘Somen’ Noodles as instructed. DO NOT add Salt into the water. Noodles need to be cooked quite firm as you will stir-fry later. After drained, sprinkle Sesame Oil to stop stick together.
  3. Heat 1 tablespoon Canola Oil in a frying pan and cook Eggs to make firm scrambled egg. Transfer to a plate.
  4. Add 1 tablespoon of Canola Oil to the hot frying pan and cook Pork. When the Pork changes colour, add Onion and Ginger and cook until soft. Add 'Mentsuyu' Sauce, then combine with cooked ‘Somen’ and the egg.
  5. Sprinkle extra Soy Sauce over if required, and some chopped Spring Onion and serve.

When you don't want to eat anything, cold Somen is very nice and easy to eat. Somen noodles in hot soup is called nyumen. Somen are thin Japanese noodles made of wheat flour. Add various vegetables and meats in the soup. The dough is stretched with the help of vegetable oil to make very thin strips and then air dried (which is why you need to rinse somen noodles after boiling).
