Instructions to make Aloo begun:
  1. Cut the veg any size i made them triangle,soak in water
  2. Fry finely chopped onion in oil,when colour change into light brown add garlic paste or chopped and ginger if anyone like
  3. Cook for few min with the onion it will release nice aroma
  4. Add chopped tomatoes with salt
  5. When tomato becomes soft add dry spices
  6. Cook the spices for 5 minutes in medium to low heat, add 1/2 cup of water and cook again for 10 mins
  7. When oil separates from from spices add water if it’s dry then bring to boil
  8. Then add all veg at the same time mix well and leave for another 10 min in medium heat, stir occasionally it might stick to the bottom
  9. If there is enough water to cook through then no need to add water
  10. If it’s too dry add 1/2 cup of water bring to boil in high heat then turn to medium,cook until the desire thickness of the curry and of course add chopped cilantro if available
  11. I added green chilli at the beginning because i love spicy food, they can be added just before finishing if it is for flavour
