The ingredients needed to make THANDAI LATTE (Thandai wala Doodh):
  1. Get 12 Almonds
  2. Take 12 Cashews
  3. Take 12 Pistachios
  4. Take 1 tbsp Melon seeds
  5. Get 20-25 Black Pepper corns
  6. Prepare 2 tsp Poppy Seeds (white poppy seeds are used for this beverage)
  7. Prepare 1 tsp Fennel seeds
  8. Get 1/3 cup Water
  9. Get 1/2 tsp Cardamom powder
  10. Take 1 pinch Saffron plus extra for garnish
  11. Make ready 3 tbsp Milk
  12. Prepare 1 tsp Cornflour
  13. Take 3 tbsp Milk
  14. Take 4-5 tsp Sweetner of your choice (I had used agave nectar)
  15. Get 600 ml Milk (dairy or non dairy)

It makes such a huge difference. For those who don't know, Thandai is an Indian traditional, festive drink made with whole milk and Thandai masala that's made with nuts and whole spices. Traditionally, this heavenly drink is served during the Maha Shivaratri and Holi festival. Thandai comes from the word 'Thanda' which means cold.

Instructions to make THANDAI LATTE (Thandai wala Doodh):
  1. Wash and soak the first seven ingredients in one third cup water, over night. Grind the soaked seven ingredients, along with the water, to a smooth paste.
  2. Soak saffron in a three tablespoons milk. Set aside for atleat an hour. (the longer the better)
  3. Heat the milk and add the saffron milk to it along with the paste. Stir well and simmer on low heat for 5 – 7 minutes. Stir every now and then.
  4. Mix the cornflour well in the remaining three tablespoons milk and add gradually to the simmering milk, stirring all the while.
  5. Add cardamom powder and simmer further for a minute. Switch off the heat and add sweetener of your choice. Serve hot and enjoy!
  6. NOTE - You can sieve the milk before serving or you can serve it as it is.
  7. Note - If you like the milk frothy, you can whisk it using a hand whisk or an electric mixer or perhaps an immersion blender.
  8. Pour in serving glasses and garnish with finely chopped pistachios and slivered almonds and a few threads of saffron (garnish is optional)
