To get started with this recipe, we have to first prepare a few components. You can have carrot cake using 10 ingredients and 9 steps. Here is how you cook it.

The ingredients needed to make Carrot cake:
  1. Get 2 carrots (chopped)
  2. Get 4 eggs
  3. Make ready 2 cup flour
  4. Prepare 1 1/2 cup oil
  5. Make ready 1 1/2 cup sugar
  6. Take 1 tb baking powder
  7. Get Topping:
  8. Get 395 g condensed milk

In a mixing bowl, mix sugar, vegetable oil, and eggs. In another bowl, sift together flour, baking soda, salt, and cinnamon. In a large bowl, whisk together flour, salt, baking soda, and cinnamon. I like using all-purpose flour, but you can substitute some of the all-purpose flour for whole wheat or white whole wheat flour.

Instructions to make Carrot cake:
  1. Pre heat the oven, 180ºC.
  2. Mix flour with sugar and baking powder and set aside.
  3. In a blender, put the carrots, eggs and oil (I use soy oil). Beat until you see a smooth mixture
  4. Put the carrots with the flour and mix gently. Then, put in a greased baking pan and put in the oven for about 30 min. You can use a toothpick to see if its done.
  5. For the topping (it's called "brigadeiro"):
  6. Mix all the ingredients in a pan and cook under low heat, always mixing with a spoon.
  7. You'll see the mixture will start to boil and double its size, keep mixing with the spoon, pay attention to the sides so they don't get overcooked or your Brigadeiro will get crumbled (its ok if it happens, btw)
  8. Keep like that till you see the mixture is a bit thick and no more attaching to the bottom of the pan.
  9. Put over the cake and spread gently. Let cool a little bit and serve.

For a gluten-free carrot cake, swap the flour for your favorite gluten-free flour blend. Baking soda helps the cake to rise. Salt, cinnamon, and vanilla extract make the cake taste amazing. Oil keeps the cake nice and moist — any neutral flavored oil will work. While some recipe historians trace the roots of carrot cake back to medieval times, we disagree.
