My fiance LOVES carrot cake, and yesterday was his birthday so I decided to look for a carrot cake recipe. He was very specific that he wanted pineapple, coconut and lots of nuts in his carrot cake. I made this cake with a few modifications and he LOVES it!

I like using all-purpose flour, but you can substitute some of the all-purpose flour for whole wheat or white whole wheat flour.

  1. Beat eggs in a bowl, mix with sugar and stir well.
  2. Beat in the oil and mix well using a hand mixer
  3. Add the vanilla, about 2tsp, baking powder and sieve in the flour. Mix well using the mixer
  4. Then add the milk gradually until you have a smooth dough not runny and not thick.
  5. Fold in the grated carrots and pour the dough in an already greased baking tin or sufuria. (I cover mine with foil paper to prevent it from burning before it is ready)
  6. Bake in a pre-heated oven at 180° for about an hour or so
  7. Check whether your cake is ready by inserting a tooth pick inside, if it comes out clean then your cake is ready if not be sure to add more time for the cake to cook well.

For a gluten-free carrot cake, swap the flour for your favorite gluten-free flour blend. Baking soda helps the cake to rise. Salt, cinnamon, and vanilla extract make the cake taste amazing. Oil keeps the cake nice and moist — any neutral flavored oil will work. While some recipe historians trace the roots of carrot cake back to medieval times, we disagree.
