In a mixing bowl, mix sugar, vegetable oil, and eggs. In another bowl, sift together flour, baking soda, salt, and cinnamon. In a large bowl, whisk together flour, salt, baking soda, and cinnamon. I like using all-purpose flour, but you can substitute some of the all-purpose flour for whole wheat or white whole wheat flour.

Instructions to make Carrot cake:
  1. Preheat your oven to 350°F. Grease a baking tin and flour it abit.
  2. In bowl, whisk flour, baking powder & soda, cinnamon and salt.
  3. In another bowl, whisk the oil, both sugars, vanilla once combined start mixing in the eggs one by one. Once it's well mixed, incorporate the dry ingredients in 3 parts with a wooden spoon.
  4. Once the batter is smooth fold in your Carrots. I opted not to use nuts.
  5. Place the batter into the baking tin and bake for 50mins-1hr or until springy to the touch and a toothpick at the centre comes out clean.

For a gluten-free carrot cake, swap the flour for your favorite gluten-free flour blend. Baking soda helps the cake to rise. Salt, cinnamon, and vanilla extract make the cake taste amazing.
