  2. Prepare 3/4 cup sugar
  3. Prepare 3 eggs
  4. Get 3/4 cooking oil
  5. Get 1 tsp vanilla essence
  6. Get 2 cups self rising flour

In a mixing bowl, mix sugar, vegetable oil, and eggs. In another bowl, sift together flour, baking soda, salt, and cinnamon. In a large bowl, whisk together flour, salt, baking soda, and cinnamon. I like using all-purpose flour, but you can substitute some of the all-purpose flour for whole wheat or white whole wheat flour.

Instructions to make Carrot cake:
  1. Peel the carrots,cut them into small pieces n place in a blender
  2. In a blender,add sugar,eggs,cooking oil n vanilla essence n blend them together until well blended altogether
  3. Pour the mixture in a bowl,start adding flour slowly by slowly as you mix until you get smooth consistent mixture but don't over do it.
  4. Preheat your oven for around 10minutes
  5. Pour the batter in a greased baked tin,tap the tin to remove bubbles.Insert inside the oven n cook for around 30mins at 180⁰c
  6. Once ready,let it cool then remove it from the baking tin.
  7. You serve it with tea or juice.Enjoy.
