I made this cake for his birthday and he declared it the best carrot cake EVER! Easy to make, moist and flavorful. I frosted it with the vegan butter cream frosting (link in the recipe), I used Violife cream cheese and plant based butter sticks from Natural Grocers. Whisk together the oil and sugar, then add the vanilla and milk.
Instructions to make Carrot Cake(Vegetarian):
- Beat the eggs until fluffy.
- Add in Sugar and Oil.
- Add in salt and vanilla essence.
- Add in grated carrot.
- Mix well.
- Add in the water and milk.
- Finally add in the crushed nuts.
- Set the gas oven and heat it before hand to make it ready for baking.
- Pour the batter into a greased metal tin.
- Close the oven and keep for baking.
- Keep the cake tin in the oven on fire for 45 minutes.
- Make sure the flame is as per your container.
- After the time is up, check with a thin metal fork if the cake is cooked completely.
- If the cake is cooked, take out from the oven and remove from the tin carefully.
- Next, place on a wire mash till the cake cools completely.
- Then, remove the butter paper from the cake and check for any burnt portions. If so, chip them off.
- Finally, cut the cake into several pieces for serving.
Combine the flour, baking powder, bicarbonate of soda, spices and orange zest in a separate bowl.
