In a mixing bowl, mix sugar, vegetable oil, and eggs. In another bowl, sift together flour, baking soda, salt, and cinnamon. In a large bowl, whisk together flour, salt, baking soda, and cinnamon. I like using all-purpose flour, but you can substitute some of the all-purpose flour for whole wheat or white whole wheat flour.

Instructions to make Carrot cake:
  1. Preheat oven…….mix and seive, flour, baking powder/soda
  2. In a bowl mix eggs + sugar till combined…….add in oil + salt + vanilla essence mix together….
  3. Add cinnamon, nutmeg and grated carrots into the eggs mixture….
  4. Now fold in flour alternating with milk…… lastly fold in nuts + raising…….
  5. Bake @170 degrees for 60mins……enjoy while cool with tea……juice…..milk
