The ingredients needed to make Masala Rava Idli:
  1. Get 1 cup Rava / semolina
  2. Get to taste Salt
  3. Make ready 1 cup Curd
  4. Take as required Oil
  5. Prepare 1 tsp Rai / mustard
  6. Prepare 1 tsp Urad dal / black lentil
  7. Take 2 Green chilli
  8. Make ready 2 tbsp Cashew nuts
  9. Make ready 1 sprig Curry leaves
  10. Get a pinch Baking soda
  11. Prepare 15-20 Dry red chilli
  12. Get 1/2 cup White sesame seeds
  13. Take 1/4 cup Chana Dal / bengal gram
  14. Get 1/4 cup Urad Dal / black lentil
  15. Take 1 tsp Hing / asafoetida
  16. Make ready 2 tbsp Butter
  17. Take 2 medium sized Onion
  18. Make ready 2 medium sized Tomatoes
  19. Take 1 tbsp Garlic paste
  20. Prepare 2 bowl Sambar daal cooked
Steps to make Masala Rava Idli:
  1. In a bowl, take rava, salt, curd and mix well. Rest for minimum 30 minutes.
  2. In a pan, add oil, Rai, urad Dal, green chilli, Cashew nuts, curry leaves. Add the tempering in the batter. Water as required.Mix and beat nicely and adjust consistency as idli batter.
  3. Grease the idli mold with oil. Add baking soda in the batter. Add the idli batter upto 3/4 of the mold. Keep the steamer ready and steam the idlies for 7-8 min.
  4. Cool the idlies a little and then demold.
  5. In a pan, dry roast red chillies for 3-4 min. Remove it.
  6. Again dry roast white sesame seeds for 3-4 min. Remove it.
  7. In a pan, add oil, chana Dal, urad Dal. Roast for 4-5 min. Remove it.
  8. Again in pan add oil, Rai, curry leaves, hing and add it in the chilli mixture. Add salt and mix well. Cool down the mixture.
  9. Grind into a fine powder.
  10. In a pan, add butter, onion (finely chopped), green chilli, garlic paste, tomatoes (finely chopped), salt. Cook until tomatoes are mushy.
  11. Add 2 tbsp podi masala (chilli mixture), water, Sambar, add idlis and coat with masala.
  12. Garnish with onion and Samar.
