  1. Wash all equipment, make sure all soap is completely rinsed off.
  2. Dissolve the sugar in water by stirring (heating not required)
  3. Place the Kefir grains and optional ingredients into your fermenting vessel and add the sugar water or fruit juice.
  4. Close lid or cover with cloth/ rubber band and leave to ferment for 24 to 48 hours in a warm, dark place. The warmer the environment the faster the process. Once fermented you will notice a change in smell and taste. It may not be fizzy yet, leaving it out for secondry fermentation will help add fizz.
  5. After fermentation remove any added ingredients and strain the kefir to speparate the grains.
  6. Pour the water Kefir grains into airtight bottles and add any additional flavouring and lave in a dark place for a further 24-72 hours for the second fermentation which will produce carbonation. Replace fruit with fresh every 24 hours until you get the desired carbonation. When ready, add ice and serve.
