This is almost exactly how I make stuffed peppers. Except that I brown and season the meat before hand, pour off the oil , mix in the remaing ingredients,stuff the peppers, and then cover during baking. Stuffed Poblano Peppers (For Breakfast)- Mildly smoky poblano peppers and stuffed with eggs, hash brown potatoes, and Mexican-style cheese! Stuffed peppers can be filled with any combination of starches, meat, beans, and sauces, making them the ultimate leftover vehicle.
Steps to make Spicy stuffed peppers :):
- Prep your peppers and if using rice, boil, drain and cool. Remove top and seeds. Boil for max of 4-5 minutes to soften. Remove and set aside to cool. Chop and fry onion in oil, add mince, chilli and paprika. Brown for 5-6 minutes
- Turn on the oven to 220. Add chopped tomatoes and beans. Cook for 10 mins or so. Add cooked rice, mix and cook for a few mins.
- While rice is resting, cover outside of peppers with olive oil and roast for 10 mins. Remove from oven and add rice and cheese. Bake for further 20 mins until yummy looking :)
