  9. Prepare 2-3 tomatoes roughly chopped
  10. Make ready 7-8 garlic cloves
  11. Prepare 1 inch ginger
  12. Get 8-10 cashew nuts
  13. Take 1 green chilli
  14. Take 1 tsp kashmiri red chilli powder
  15. Take 1/2 tsp red chilli powder
  16. Take 1/2 tsp turmeric powder
  17. Take 2 tsp coriander powder
  18. Make ready 1/2 tsp garam masala
  19. Get 1/2 tsp cumin powder
  20. Prepare 1 tsp kasuri maithi(dried fenugreek leaves)
  21. Make ready 1 tsp cumin seeds
  22. Take to taste Salt
  23. Get 2 tbsp cream /fresh malai
  24. Make ready Oil for shallow fry..to all veggies

  1. Heat 2 tbsp oil in a pan add chopped veggies one by one and shallow fry them till they turn light golden in colour..
  2. To make besan gatta..In a bowl add 2 tbsp gram flour (besan)., Pinch of salt, red chilli,carom seeds, tsp of oil and curd…Make a dough..Roll and cut into pieces..And boil in water.
  3. Heat tsp of oil /butter in a pan…Add roughly chopped Onion, ginger,garlic cloves and green chilli…Fry till the onion turn translucent…on medium heat..Then add roughly chopped tomatoes and cashews…Fry till the tomatoes cooked and turn mushy..Let the mixture cool.
  4. Add the mixture in the grinder..And grind to make a smooth puree…
  5. Heat a pan… add butter/ oil….Add cumin seeds..Let them splutter..Add prepared mixture (grinded)..Cook for a min..on medium heat…Add all dried.. Spices to the gravy…Stir well..Add cream and cook till masala start to leave oil on the sides.
  6. Add 1 cup of water to the gravy..And bring it to boil…Add salt…Mix well…
  7. Add all fried vegetables to the gravy and mix nicely…Cover the pan and cook for 4 -5 min.. till oil comes on surface… Switch off the flame…Add fresh chopped coriander and mix..
  8. Restaurant style mix veg curry is ready to serve…Serve with..Roti, chapati or with Naan.

Occasionally I do make dry version too, I will share that recipe later. Mixed vegetable curry for chapati, roti, poori or plain rice. Mixed vegetable curry is often prepared at home for quick dinner. I do not follow any particular recipe to prepare this and like to alter the taste of the curry every now and then. This recipe can be followed to make semi dry curry or gravy.
