  2. Prepare 3 garlic cloves, crushed
  3. Take 1 tin chopped tomatoes
  4. Take 1-2 red chilli's, deseeded and chopped (optional)
  5. Make ready 1 tbsp chopped parsley
  6. Take 3 tbsp olive oil
  7. Take 180 g raw peeled prawns
  8. Make ready 2 tsp red wine vinegar
  9. Make ready 280 g spaghetti
  10. Make ready 1 tsp sugar
  11. Get Parmesan cheese or other of choice to sprinkle

Instructions to make Spaghetti with Prawns in a Tomato Sauce:
  1. Cook pasta according to packet instructions in a pot of salted water. Reserve cup of the pasta water and drain the rest when cooked through.
  2. In the meantime, heat olive oil over a medium-low heat and fry the prawns on each side, (I used large prawns which took less than 2 minutes to fully cook). Set aside once done.
  3. Add the garlic and chilli into the same pan used to cook the prawns and fry for about a minute or so until fragrant.
  4. Next add the tin tomatoes, parsley, sugar, vinegar and a 2-3 tablespoons of pasta water and simmer down for about 10 minutes until the sauce has thickened slightly. Season with salt and black pepper.
  5. Add the drained pasta, spinach and 2-3 more tablespoons of pasta water and cook for another 5 minutes or so until the spinach has fully wilted.
  6. Lastly add the cooked prawns and toss all together until the pasta is fully coated in the sauce and spinach.
  7. Serve sprinkled with cheese of choice (I used grated Cheddar cheese)
