Pumpkin and coconut go very well together! Heat the oil in a medium skillet over medium heat. Add the onion mixture to a blender or food processor and add in the remaining ingredients: pumpkin, milk, and salt and pepper. When I added the cream to the sauce mixture it CURDLED.

  1. Heat butter in a pan, add minced garlic cloves and Sauté over medium-low heat for 1-2 minutes, or just until the garlic is soft and fragrant.
  2. Add the pumpkin purée and vegetable stock and stir well.
  3. Add the nutmeg, chilli powder and freshly cracked black pepper.
  4. Stir in the spices and let the sauce simmer over medium-low heat while stirring occasionally.
  5. Let it simmer for another 2 minutes so that it thickens.
  6. Now add cream and stir well.
  7. Taste the sauce and add seasoning if required.
  8. Finally garnish with chilli flakes and serve with chips, pasta or ravioli.

The instructions dictate that the cream is to be added to the pan (which has hot oil in it) after the pumpkin, so I thought it would be ok. It completely ruined the sauce (and I think the recipe should change the order of the ingredients added and/or suggest warming the cream. Cream cheese - Again, to make this dairy-free, we ate this sauce made with vegan cream cheese. You can use any kind, but make sure it has fat! Pumpkin is our VIP in the flavor department, but also adds smooth texture.
