Yam Porridge can also be referred to as yam soup. It is mainly yam cooked with ingredients and the resulting dish contains some soupy liquid. It is usually not cooked with added vegetables but I always add a little to add some green colour to the meal (see video).

  1. Prepare 1 small tuber of yam
  2. Get Palm oil

Yam Porridge is made with White/Puna Yam. This method of preparing Yam Porridge is peculiar to the Yoruba tribe of Nigeria because unlike popular Yam Porridge recipes which call for Vegetable leaves, this recipe is without. Yam porridge, which is also known as yam pottage or pottage yam is a popular yam delicacy distinguished by its juicy thickened porridge. Fresh yam pieces in a thick aromatic porridge sauce and finished off with some fresh green spring onions is what this recipe stands for.

Steps to make Yam porridge:
  1. Peel the yam and cut into sizeable chunks
  2. Wash and put in a clean pot
  3. Add some diced onions, crayfish, salt, seasoning cubes, pepper, dry fish, beef (already steamed), palm oil and water (just enough to cover the yam)
  4. Cover the pot and put it on fire.
  5. Keep stirring periodically once the yam begins to boil (this will help you achieve the thick nature of the porridge)
  6. Once the yam is soft and the paste is thick enough, then you can add the ugu leaves and bring down the porridge and it is ready to serve.

Peel off the bark of the yam, slice to serve-able sizes, wash and set aside. Also slice or grind the tomatoes, fresh pepper and a cup of crayfish. I use lots of onions while making most foods, just for its health benefits. Preparing yam porridge requires peeling the yam, cutting the yam tuber into small thick pieces, then cooking the whitish fleshy starchy part with a collection of selected ingredients. In most of the West African markets and busy roads, yam are usually fried and sold as "street food" or "roadside food".
