Entered a chili cookoff competition at work with this recipe and came in second. Everyone gave it high marks and mainly wanted to taste it due to the uniqueness of using pumpkin in a chili. Am planning to enter it in a chili competition at a local festival next year.

The ingredients needed to make Pumpkin Chili:

To me, fall is chili season. I love simmering big pots of traditional chili once the weather turns cold, to serve with fluffy cornbread. However, when my classic chili hand has been overplayed, I turn to alternative chili recipes like… Pumpkin Waffles for breakfast and then this Pumpkin Chili for the rest of the day! This recipe can be made on the stovetop or in the slow cooker.

Instructions to make Pumpkin Chili:
  1. Saute meat, onions and garlic in a pot until browned
  2. Add all other ingredients and bring to a boil.
  3. For the beer, IPA is good if you're going spicy and light beer is good for mild. For the chilis, I like arbol and chipotle, but do whatever you like.
  4. Cover and simmer for at least a half hour, but the longer the better.
  5. Plate, add cheese and sour cream to taste, and serve!

Just make sure that if you're doing it in the slow cooker, that you sauté your vegetables and brown your meat before adding!!! If I have the time, though, I like to cook it on the stovetop. In a large skillet, saute the onion and green and yellow peppers in oil until tender. The BEST EVER Pumpkin Chili - Pumpkin isn't just for dessert! Reduce heat to medium low and add beans.
