Slightly thicker than the usual flat rice noodle (kuey teow), making the laksam noodle has always been more like a homemade affair - they are almost never seen or sold readily made and packed in the market unlike all the other easily available types of noodle. Primarily popular along the east coast of Peninsular Malaysia and Kedah, laksam is a laksa dish that epitomises traditional Malay cuisine. The first thing you'll notice about laksam is the colour of the gravy. Made using coconut milk, tamarind, and boiled mackerel, laksam gravy is rich, creamy, and boasts a colour similar to alfredo sauce.

Cook with medium heat. Then blend all the bones and fish head with remaining 2 cups of coconut milk. Strain the bones and only take the fish solution.Mix well until it cooked.
- Blend all chili paste ingredient with 1/2 cup of water. Make sure the texture is course.
- Wash all vegetables and let it dry. All vegetables except Water Celery and bean sprout are finely chopped and served as condiments
- Assemble the Laksam inside a bowl as below. Best served when the gravy is still hot.
